Avocado pasta


serves 2-3 people
15 minutes

1 ripe avocado
1 lemon
1 garlic clove
, peeled
4 tbsp olive oil 
Parmesan
(optional)
A few basil leaves
(optional)
300g long, wide pasta
(pappardelle / tagliatelle)

  • Heavily salt the pasta water and boil, add the pasta and begin to cook (you should be able to make the sauce in the time it takes for dried pasta to cook)
  • In a blender, add the lemon juice, oil, avocado, garlic, salt and pepper. You can add any other flavour here too - a tsp of chilli flakes or oregano would work well.
  • Blend the ingredients. If the sauce appears too thick, add a few spoonfuls from the pasta water to the blender to thin the sauce. The sauce should fall from the sides of the blender rather than sticking to the top.
  • When the pasta is cooked, drain the water and add back into the saucepan. Stir in the sauce, coating the pasta completely.
  • Plate up the pasta and finish with some torn basil, grated parmesan, more seasoning (if required) and a dressing of olive oil.
